THE INGREDIENTS NEEDED:
1 Lb.Of fresh salmon fillets, skin removed and finely chopped.
1/2 Cup.Of finely chopped onion.
1/4 Cup.Of finely chopped celery.
1/4 Cup.Of finely chopped red bell pepper.
2 cloves garlic, minced.
1/4 Cup.Of mayonnaise.
1 Tbsp.Of Dijon mustard.
1 Tbsp.Of fresh lemon juice.
1 Tsp.Of Old Bay seasoning.
1 Tsp.Of smoked paprika.
1/2 Tsp.Of cayenne pepper (adjust to taste).
Salt and black pepper, to taste.
1 Cup.Of breadcrumbs, divided.
2 large eggs, beaten.
Vegetable oil, for frying.
PREPARATION:
1st Step
Combine the finely diced salmon, onion, celery, red bell pepper, and minced garlic in a large mixing basin.
2nd Step
Add smoked paprika, cayenne pepper, black pepper, Old Bay spice, mayonnaise, Dijon mustard, and fresh lemon juice. Make sure that every component is well mixed in.
3rd Step
Fold and stir in the 1/2 cup of breadcrumbs gradually until the salmon mixture comes together. Add more breadcrumbs as necessary to get the right consistency.

Make sure the salmon mixture is compact and holds its form by shaping it into patties of your desired size.

Dip each salmon patty into the beaten eggs, covering evenly. Next, sprinkle the patties with the remaining breadcrumbs, pressing them on lightly to adhere.
